The popular off-licence The Bon Vivant’s Companion in Edinburgh is undergoing a transformation into a new wine bar called Du Vin Bouchers. The unit, located on 51 Thistle Street, was put up for sale in September, and now exciting plans are in place to turn it into a wine bar that will also offer a selection of cheese and charcuterie pairings. The Bon Vivant’s Companion is known for its wide range of beers and wines, and it is located next to the bar and restaurant The Bon Vivant.
Du Vin Bouchers, currently based in Linlithgow, West Lothian, is looking to expand its operations to Edinburgh with this new wine bar venture. The proposed plans for the transformation include utilizing the basement and ground floor for the wine bar, with a special private tasting area on the upper floor. The aim is to create a relaxed setting where patrons can enjoy quality wines by the glass or bottle, along with curated cheese and charcuterie pairings.
According to the supporting statement, the establishment is currently operating as an off-licence under Class 1, and the proposal seeks to convert it into a wine bar (Public House). The Edinburgh Council has stated that planning permission is not required for this transformation as it does not involve the demolition of a listed building.
This new addition to the Edinburgh city center will provide locals and visitors with a sophisticated yet cozy spot to enjoy a glass of wine paired with delicious cheeses and charcuterie. The expansion of Du Vin Bouchers to Edinburgh is sure to bring a new and exciting dining experience to the area.
